- 200 ml mayonnaise (use sour cream or natural yoghurt for a tart and less rich sauce)
- 2 eggs, hardboiled and crushed
- 1 tbsp whole-grain mustard
- Some salt
- Freshly ground black pepper
- Seasonal fresh herbs
This cold sauce can easily be varied to accompany different dishes. This version is perfect for freshly smoked fish in the summer.
A dish with great flavour combination is raw-pickled fish seasoned with juniper berries and served with new potatoes and Kuusamo sauce for fish.
Season the sauce with 50 ml of finely diced cold-smoked salmon for an easy accompaniment for baked jacket potatoes.
